    “While you restore the entire volume”, you already started with option C, inserted the Veeam Recovery Media and restore only volume /dev/sdc on the physical server. That will promote downtime of the server on the network and shared files.

    To make temporarily accessible as fast as possible to provide business continuity, you preform Instant Recovery to create a VMware VM, so everyone can access the files. Other two options are rubbish.
